We make a big noise about the provenance of our food at The Harwood! This is because we are in the privileged position of being able to select our ingredients direct from the wild. I have been shooting and cooking wild game since my early teens and more and more I realise what a good and sustainable approach this is. We use extremely plentiful ingredients, which in most cases have to be controlled to prevent numbers getting out of hand ( Deer, Rabbits, Crayfish, Pigeon etc). These animals have lived the best, healthiest life imaginable, rarely suffering from illness, require no antibiotics and have a humane end. All the game is processed to the highest hygiene standards at Vicars Game in Berkshire, then sent daily to the Harwood. Other wild produce includes Signal Crayfish from the river Kennet, asparagus from a local farm, Pheasant eggs ( a real gamekeepers treat, only available for 6 weeks in the spring) and much more.
